VEGETABLES & HERBS
Kallisto Farms has Herb Garden Raised beds with a wide variety of aromatic herbs, including several types of Mint and Basils, Rosemary, Thyme, Marjoram, Tarragon, Oregano, Lemon Balm, Lemon Grass, and Sage. Main vegetable areas have plantings interspersed with Parsley, Italian Parsley, Celery, Basils and Lavenders. We also have two types of Jasmine Arabica used for teas.
Vegetables are planted by season – cool / short days - warm / hot long days.
Cool weather crops include crops such as lettuces, spinach, broccoli, cauliflower and cabbages, peas, kale, endive and kohlrabi, beet, asparagus, rhubarb, artichokes and many others.
Warm weather plantings include corn, beans, green and dried, squash, potatoes, sweet potatoes, sweet onions, scallions, leeks and shallots, specialty heirloom tomatoes, peppers- sweet and hot, carrots, cucumbers and eggplant, and many others.
We are careful to select uncommon varieties, including heirloom choices,that focus on flavor profiles that do well in our climate zone. We have crazy fun beets, various cabbages, colorful cauliflowers and sweetly flavored leaf and head lettuces. Heirloom dried beans taste amazing when used freshly dried.
In the summer we look forward to delicious and varied orange, black, yellow and red tomatoes and super sweet cherry tomatoes. Potatoes are red, white, yellow and purple and are creamy and delicious. Carrots come in a rainbow of colors. In addition to traditional purple, there are sweet white eggplants. There are green string beans, long beans, and yellow wax beans plus many heirloom dry bean varieties that can be enjoyed all year long. Cucumbers are delicious as fresh or pickled and peppers hot or sweet enliven up many a dish.
